Quest Cookie Copycat. Took a While to Perfect, But They Turned Out Pretty Great. Would Love Feedback!

Ingredients
- 6 tbsp butter - softened
- 84 g protein powder (I used unflavoured isopure for 0 carbs)
- 36 g pb2 powdered peanut butter (you can add more or take it out, that just requires some tweaking with the coconut oil and milk values to keep it moist)
- 6 tsp psyllium husk powder (glucomannan or other fibre powders work too, it's just about finding the right amount for that specific one)
- 1 tsp xanthan gum (this might be a little much. Maybe half or a quarter tsp would be fine.)
- .5 tsp baking soda
- 4 tbsp erythritol
- .5 tsp vanilla extract
- 2 tbsp coconut oil
- 8 tsp milk (I had to add it half a teaspoon at a time otherwise they get weird. I'm sure just going for it and using 3 tbsp would be fine)
- Chocolate of choice to taste
Steps
- Start by softening the butter by just letting it rest for a bit while you assemble the dry ingredients and preheat your oven to 350 Fahrenheit. Cream together the butter, protein powder, peanut butter powder, psyllium, xanthan, and baking soda. Add the erythritol once these are well-combined. Add in the coconut oil and vanilla next. I add the milk very last because you want to add just enough to give it that cookie dough consistency. Add your chocolate very last of all. Form into 12 balls on a baking sheet. These don't spread much, so you can decide how thick they are.
- Bake for about 5 minutes or until the tops of the cookies are just beginning to dry/cook. Take them out and let them rest on the baking sheet for a few minutes, then move them to a cooling rack when they have firmed up a little.
- Macros: 140 cal, 4.1 g carbs, 2.8 g fibre, 8g protein, 11 g fat. They're roughly half of a quest cookie.
- I'm staring at these while I put this together and am so tempted to eat them all, but I've hit my goals for the day... :/
