Almond Butter Noodles
Ingredients
  • 1 package soba or udon noodles (about 9.5 oz)
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons tamari
  • ¼ cup seasoned rice vinegar
  • ½ cup almond butter
  • 3 tablespoons pure maple syrup
  • 1 tablespoon chili-garlic sauce
  • 2 teaspoons freshly grated ginger (or store-bought minced ginger)
  • Toppings: thinly sliced scallions, black sesame seeds, lime wedge
