Vegan Feta Cheese
Ingredients
  • ½ block of firm tofu (approx. 198g) (see note 1)
  • 1 cup water / non-dairy milk / canned coconut milk (for a more rich and creamy feta)
  • Juice of 2 medium lemons (taste before adding second lemon)
  • 1.5 tbsp miso paste (white or yellow)
  • ¾ tsp sea salt (see note 2)
  • ¼ cup tapioca starch / flour (see note 3)
  • 2 tbsp kappa carrageenan (see note 4)
  • 1 tbsp dried oregano
  • 2 tsp dried basil
  • 2 tbsp unfortified nutritional yeast, optional
