Vegan Pumpkin Bread
Ingredients
  • 2 tablespoons flaxseed meal
  • 5 tablespoons water
  • ⅔ cup pure maple syrup
  • ¼ cup unsweetened applesauce
  • 1 15-ounce can pumpkin puree - about 1 ½ cups (not pumpkin pie filling!)
  • ¼ cup unsweetened almond milk
  • 1 teaspoon pure vanilla extract
  • 2 cups white whole wheat flour
  • 1 ½ teaspoons pumpkin pie spice*
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • For topping: pumpkin seeds - chocolate chips, or chopped raw walnuts or pecans (optional)
