Shrimp and Avocado Garlic Bread

It seems like a lot but it’s not hard or long to make; I promise you! With limited ingredients you can make this quickly for guests as an appetizer or serve on its own as a meal!
Ingredients
- subheading: Garlic Butter:
- ½ cup unsalted butter, softened
- 3 to 4 garlic cloves, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon ground black pepper
- ¼ teaspoon ground paprika
- ¼ teaspoon salt
- ⅛ teaspoon garlic powder
- 4 to 5 chopped chives
- subheading: Garlic Shrimp:
- 3 to 4 garlic cloves, minced
- 1 teaspoon sweet paprika
- Juice of half a lemon (about 1 to 2 tablespoons)
- 1 pound of shrimp (no tail, peeled and deveined)
- ¼ teaspoon kosher salt
- 1 teaspoon dried parsley
- subheading: Shrimp, Avocado Salad:
- Garlic shrimp (see above)
- 1 avocado, cubed
- 1 cup chopped tomatoes
- Salt and pepper to taste (I used about ⅛ teaspoon regular salt)
- subheading: Garlic Bread:
- 1 recipe for garlic butter (see above)
- 1 loaf of fresh, sliced artisan bread or bakery bread of your choice
- Cooking spray or ½ tablespoon oil
Steps
- subheading: Start with the garlic butter:
- *I usually prep this by taking out the butter to soften 2 hours in advance*
- In a food processor, combine softened butter, garlic, chives and seasonings. Pulse until smooth.
- subheading: Cook your garlic shrimp:
- Combine garlic, paprika, lemon juice, kosher salt and shrimp in a bowl and mix well to combine the ingredients.
- Heat a large skillet with a teaspoon of oil and once hot, add the shrimp and cook for about 6 to 8 minutes.
- Take off the heat and add the parsley. Set aside to cool slightly.
- subheading: Make your Shrimp, Avocado Salad:
- Combine the diced avocado, tomato, and a bit of juice from the cooked shrimp in a bowl. Season with salt and pepper to taste then add the shrimp. Mix to combine.
- subheading: Toast your garlic bread:
- Set your oven to HI: Broil. Grease a baking tray with cooking oil spray or oil.
- Using a spatula, scoop your garlic butter into a clean bowl. Spread a thin layer of garlic butter on each slice of bread (I had about 11 to 12 slices).
- Broil your garlic bread until golden. I set mine for 4 minutes under high broil. *(Every oven is different so please make sure to keep an eye on your bread!)
- Once done, top each slice with a spoonful of the shrimp and avocado salad. Serve warm and enjoy!
