Oat, Coconut & Walnut Chocolate Chunk Cookies
  • 125g salted butter, softened
  • 1 ½ cups (200g) coconut sugar or 1 cup firmly packed (200g) brown sugar
  • 1 tablespoon vanilla extract or vanilla bean paste
  • 1 egg
  • 1 ¼ cups plain (all-purpose flour)
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda (bi-carb soda)
  • ½ teaspoon sea salt
  • ¾ cup rolled oats
  • ½ cup roasted walnuts, roughly chopped
  • ½ cup flaked or shredded coconut
  • 160g mix of dark and milk chocolate, roughly chopped
