This soup was inspired by French cassoulet, a rich, slow-cooked stew, born in the sunny, Southern French countryside. This streamlined version uses fewer ingredients and is made in the microwave, so it cooks faster and has fewer dishes to clean.
Ingredients
  • 1 pkg Coq au Vin Seasoning (Pack of 3) or Rotisserie Chicken Seasoning (Pack of 3)
  • 1 lb (450 g) lean ground chicken
  • 1 can (19 oz/540 ml) unsalted, white kidney beans, drained and rinsed
  • 1 can (14 oz/398 ml) crushed tomatoes
  • 4 cups prepared Nourish Broth or Vegetable Broth
  • 3 cups mixed, frozen vegetables
