  • 6.5 cups beef stock
  • ½ cup heavy cream
  • ¼ tsp black pepper
  • 1 pinch nutmeg
  • 1 tbsp fresh thyme plus more for garnishing
  • 1 cup gruyere shredded, plus more for garnishing
  • ½ cup parmesan shredded
