  • ½ onion (about ⅔ cup)
  • 1 cup - pineapple chunks (fresh or thawed from frozen)
  • 6 - cloves garlic
  • 1 to 2 - serrano peppers (seeded) or any pepper to give it the sweet heat bite
  • ½ cup - white vinegar
  • 4 teaspoons - ground thyme
  • ⅛ teaspoon - ground cloves
  • 2 teaspoons - ground allspice
  • 2 teaspoons - ground cinnamon
  • ½ to 1 teaspoon - cayenne pepper
  • ¼ teaspoon - oregano
  • 1 cup - water
  • 4 - dates (I used deglet)
