One Pot Bacon Braised Lamb Stew
Ingredients
  • 2 oz Raw Bacon, strips
  • 2 Tbsp Tapioca Starch, or other gluten free flour/starch of choice
  • 1 ½ lb Ground Lamb, or chopped lamb or lamb loin
  • ½ tsp Black Pepper
  • ½ tsp Sea Salt, or to taste
  • 1 cup Onion, chopped
  • ½ tsp Garlic, minced (or about 1 clove)
  • 3 ½ cups free range, organic Chicken Stock, or vegetable stock (gluten free)
  • ½ tsp Granulated Honey, or sugar (Optional)
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • ¼ tsp dried Thyme
  • 2 cups White Potatoes, chopped (use sweet potato for paleo option)
  • ¼ cup White Wine, omit if paleo
  • 1 whole Bay Leaf
