Totally Addicting Vegetarian Kale Salad
Ingredients

  • 1 batch crispy chickpeas
  • ¼ cup uncooked quinoa
  • ½ (or 1 full) avocado, diced
  • 2 to 3 hard boiled eggs, chopped
  • 1 tablespoon tahini
  • 1 tablespoon apple cider vinegar
  • juice of 1 lemon (about 2 tablespoons)
  • 1 to 2 crushed garlic cloves, depending on taste
  • Pinch of salt + pepper
  • Red pepper flakes for spice (optional)
  • subheading: for the chickpeas:
  • 1 (15oz) can organic chickpeas, drained + rinsed
  • 1 tablespoon coconut oil, softened or melted
  • Salt + pepper to taste
