Ingredients
  • 1 spoonful of olive oil
  • 1 little onion, chopped
  • 3 pieces of garlic, finely chopped
  • 2 carrots, peeled and cut into pieces.
  • 2 pieces of celery, cut into small pieces
  • 1 green pepper, chopped
  • Half of a green cabbage, cut into pieces.
  • 1 can of diced tomatoes (14.5 ounces)
  • 6 cups of vegetable or chicken broth
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • ½ teaspoon of paprika
  • ¼ teaspoon of ground black pepper
  • ¼ teaspoon of salt (if desired)
  • 2 cups of fresh spinach or kale (if desired)
  • ¼ cup of chopped fresh parsley to use as decoration.
