Ingredients
  • 1lb Raisins (sultana or Thompson)
  • 1lb Prunes, rough chopped
  • 1lb Currants
  • ½ cup Mixed fruit (optional)
  • 2 cups red wine
  • 1 cup Jamaican  White Rum (Wray and Nephew Overproof or any white rum)
  • 1 cup port or sherry

  • note: Note: Mixed fruit (also called mixed peel) is optional and can be added with the other fruits or later to the batter before baking to preserve the flavour and texture.
