- 1lb Currants
- ½ cup Mixed fruit (optional)
- 2 cups red wine
- 1 cup Jamaican White Rum (Wray and Nephew Overproof or any white rum)
- 1 cup port or sherry
- note: Note: Mixed fruit (also called mixed peel) is optional and can be added with the other fruits or later to the batter before baking to preserve the flavour and texture.
