Ingredients
  • 1 pound ground pork sausage (we used Jimmy Dean’s Original)
  • 1 tablespoon vegetable oil
  • ½ cup chopped red onion
  • ½ cup finely diced red bell pepper
  • 1 jalapeno pepper, seeded and finely minced
  • 8 ounces Velveeta cheese, cubed
  • 1 package (8 oz) cream cheese, softened and cubed
  • 1 cup shredded cheese (we used Colby Jack), plus more for topping if desired
  • 1 can (10 oz) can diced tomatoes with green chiles, drained
  • ¾ cup canned black beans, rinsed and drained, plus more for garnish
  • 2 tablespoons chopped fresh cilantro, plus more for garnish
  • Tortilla chips for serving
  • Favorite nacho toppings, including fresh tomatoes, diced avocado, sour cream, and sliced jalapeno
