Italian Loaded Polenta Fries
w/Quick Baby Romaine Salad

Ingredients
  • 2 (18-oz) tubes polenta
  • 5 Tbsp olive oil, divided
  • 1/ tsp Italian seasoning
  • ½ lb ground Italian turkey sausage
  • ¾ cup marinara sauce
  • I cup freshly shredded fontina cheese
  • 2 Roma tomatoes, chopped
  • 1 (0.5-oz) pkg fresh basil, leaves, separated
  •  
  • subheading: Side Dish:
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • I clove garlic, minced
  • ¼ tsp kosher salt
  • ¾ tsp pepper
  • 1 (5-oz) pkg baby romaine mix
  • 1 cup sliced radishes
  • 1 cup sliced English cucumber
  • ¼ cup chopped fresh parsley
Steps
  1. Preheat oven to 425°F. Cut polenta
  2. into ¼ inch-thick sticks. Gently toss
  3. together polenta, ¼ cup oil, and
  4. Italian seasoning on a foil-lined large
  5. rimmed baking sheet. Bake 30 to 35
  6. minutes or until browned and crisp,
  7. stirring halfway through baking.
  8. Meanwhile, cook sausage in 1 Tbsp
  9. hot oil in a skillet over medium-high
  10. heat 6 to 7 minutes or until brown
  11. and crumbly.
  12. Top fries with marinara sauce,
  13. sausage, cheese, and tomatoes.
  14. Bake 5 to 7 minutes or until
  15. thoroughly heated and cheese melts.
  16. Sprinkle with basil.
  17. subheading: Side Dish:
  18. Whisk together oil, lemon juice, garlic, salt, and pepper in a large bowl.
  19. Add lettuce, radishes, cucumber, and parsley: toss.
