No-Oil Pesto Baked Potato Kale Salad
Ingredients
  • ¼ to ⅓ cup 1 tbsp No-Oil Spinach Pesto Dressing, divided (recipe link below)
  • 1 small white or red potato (about 3 inches long and 2 ½ inches wide)
  • 2 to 3 cups curly kale ribbons (cut into skinny strips)
  • ¼ Hass avocado
  • ¼ cup sprouts (kale, radish or bean sprouts) or sub with chopped broccoli
  • ¼ cup shelled edamame (or sub garbanzos)
  • ¼ cup chopped green onions
