Green Bean Noodles Recipe with Chilli Oil and Sichuan Pepper (Ma La Liang Fen) - Tina Li
Ingredients
  • To serve: roasted peanuts and thinly sliced spring onion
  • Mung bean noodles
  • 70 gm mung bean flour (see note) (½ cup)
  • Chilli oil dressing
  • 1 tbsp finely chopped ginger
  • 1 garlic clove, finely chopped
  • 1½ tbsp each soy sauce and chilli oil (see note)
  • 2 tsp Chinkiang black vinegar (see note)
  • 1 tsp sesame oil
  • ½ tsp caster sugar
  • ⅓ tsp ground Sichuan pepper
