Bruschetta Chicken Pasta
Ingredients
  • 1 Tbsp olive oil
  • 1½ pounds (2 chicken breasts) boneless skinless chicken breasts, thawed not frozen
  • 4 tsp. Italian seasoning
  • 1 tsp. kosher salt
  • 1 tsp. black pepper
  • 3½ cups chicken broth (or 3½ cups water plus 3½ tsp. Better Than Bouillon chicken base)
  • 1 pound uncooked cavatappi or cellentani pasta (or other pasta of your choice)
  • 1 pound roma tomatoes (about 5 roma tomatoes)
  • 4 minced garlic cloves
  • ½ cup chopped basil (fresh)
  • ¼ cup olive oil
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ⅓ cup grated Parmesan cheese
