Lupin Tortilla Chips
Ingredients
  • 1 cup lupin flour (120 grams)
  • 1½ tsp salt
  • 60 grams water
  • Corn extract, optional
  •  
  • 1 cup oil for frying
Steps
  1. Preheat oil in a medium size frying pan . Oil should be about ½ deep just enough for chips to float around in while frying.
  2. In a medium size bowl combine ingredients . Do not add extra water.
  3. Should only take a few minutes to combine.
  4. Once combined cover let set for about 5 to 10 minutes.
  5. Cut dough in 4 and recover remaining 3 pieces.
  6. Roll dough out as thin as you can. cut in shapes and sizes you would like .
  7. Add scraps of dough to the next batch of dough you roll out and repeat.
  8. Drop chips in when the oil reaches about 365 to 375 fry only a few seconds and flip them over in the oil let fry few more seconds and remove. Don't over fry them they will get darker in color once you remove them from oil .
  9. Place chips on paper towels sprinkle with salt if you wish.
