  • 1 cup mixed nuts (such as walnuts, cashews, almonds, and hazelnuts), roughly chopped
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 celery stalk, finely chopped
  • 1 cup mushrooms, finely chopped
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • 1 tsp fresh rosemary, chopped (or ½ tsp dried rosemary)
  • Salt and pepper to taste
  • 1 cup breadcrumbs (use gluten-free if desired)
  • 1 tbsp soy sauce or tamari (optional for extra umami)
  • ½ cup vegetable broth
  • 2 tbsp ground flaxseed mixed with 6 tbsp water (or 2 beaten eggs for a non-vegan option)
  • Fresh parsley, chopped, for garnish
