Ingredients
  • 6 tbsp butter, divided
  • 1 medium onion, coarsely chopped
  • 2 carrots, coarsely chopped
  • 2 tomatoes, coarsely chopped
  • 3 cloves garlic, coarsely chopped
  • ½ tsp dried tarragon leaves or dried parsley
  • 2 cups white wine
  • 2.5 cups cooked basmati rice
  • 2 quarts shellfish stock
  • ¼ cup heavy cream or coconut milk
  • salt and white pepper to taste (about ½ tsp each)
  • 1 lb crawfish tails or raw shrimp, peeled
  • 1 handful chopped flat-leaf parsley
