Spicy One Pot Soup!
Ingredients
  • I was reading over the ingredients for one of those soups that are suppose to help with weight loss and I thought.." Well that sounds flavorless" so I made my own using things I had around the house. Each bowl is roughly 103 calories (according to myfitness pal), can be made in one pot and is not that expensive to make. I call it " Get in the pot" soup. Ingredients: 1 can of diced tomatoes juice and all
  • 1 can of stewed tomatoes ^ repeat
  • 1 can of fire roasted toamatoes. I used the salsa flavor to give it a bite and it worked. Juice and all
  • 4 to 5 Cups of water depending on how strong you want it.
  • 1 fresh Italian sausage, casing removed and crumbled. It can be mild or hot, depending on how spicy you like things.
  • 2 Cups kale, stalk removed
  • 2 cups baby carrots, whole
  • 1 celery stalk diced
  • ½ small whit onion diced
  • 2 beef bullion cubes
  • 2 baby sweet peppers diced
  • ¼ cup basil- fresh or dried
  • garlic salt to taste
  • sea salt to taste
  • Throw it all in the pot. Boil for 30 minutes and simmer for 15 or until sausage is done and vegetables are at desired consistency. I like mine a little bit firm but you can definitely go softer. Makes 8 to 10 servings.
