Mackerel Patties

I enjoy finding healthy alternatives to foods that create nostalgia and trying out recipes that use unconventional foods to that end.

15 oz canned Mackerel in brine

2 eggs

¼ cup of grated Parmesan cheese

½ cup of pork rind crumbs

2 tbsp. of cream cheese

2 tbsp. of mustard

2 tbsp. of chopped chives or scallion

butter for frying
