Keto Chicken - Creamy Chicken Chowder

Ingredients
- 2 tablespoon olive oil
- 1 clove of garlic, chopped
- 1 medium onion, diced
- 3 pound of chicken thighs, diced
- 1 cup of chicken broth
- 1 or 2 cans of diced tomatoes, drained
- ½ can diced jalapeno, drained or 1 diced jalapeno
- 2 tablespoons lime juice concentrate
- 2 tablespoons of cilantro, chopped
- 8 oz cream cheese (1 block)
- ½ cup coconut milk (optional)
- 1 ½ teaspoon of salt (taste soup before adding)
- 1 teaspoon of pepper (taste soup before adding)
- additional chopped fresh cilantro tops (no stems) to garnish
Steps
- Heat olive oil on medium
- Add garlic and saute until golden
- Add diced onion and cook until slightly browned
- Add diced chicken and saute until done
- Add broth, tomatoes, jalapeno, lime juice and cilantro
- Cook until thoroughly heated
- Add cream cheese
- Taste, and add salt and pepper to taste.
- Serve with additional chopped cilantro garnish
Notes
- This would be good with some coconut milk as well, maybe ½ cup. This is a thick soup, so don't decrease the broth if you add coconut milk.
