Keto Chicken - Creamy Chicken Chowder

Ingredients
  • 2 tablespoon olive oil
  • 1 clove of garlic, chopped
  • 1 medium onion, diced
  • 3 pound of chicken thighs, diced
  • 1 cup of chicken broth
  • 1 or 2 cans of diced tomatoes, drained
  • ½ can diced jalapeno, drained or 1 diced jalapeno
  • 2 tablespoons lime juice concentrate
  • 2 tablespoons of cilantro, chopped
  • 8 oz cream cheese (1 block)
  • ½ cup coconut milk (optional)
  • 1 ½ teaspoon of salt (taste soup before adding)
  • 1 teaspoon of pepper (taste soup before adding)
  • additional chopped fresh cilantro tops (no stems) to garnish
Steps
  1. Heat olive oil on medium
  2. Add garlic and saute until golden
  3. Add diced onion and cook until slightly browned
  4. Add diced chicken and saute until done
  5. Add broth, tomatoes, jalapeno, lime juice and cilantro
  6. Cook until thoroughly heated
  7. Add cream cheese
  8. Taste, and add salt and pepper to taste.
  9. Serve with additional chopped cilantro garnish
Notes
  • This would be good with some coconut milk as well, maybe ½ cup.  This is a thick soup, so don't decrease the broth if you add coconut milk.

  • To cut carbs, use ½ a medium onion (-1 carb), less tomatoes (1 can is about 4 carbs per serving), less cream cheese (2 carbs per ounce, so 4 carbs per bowl... half as much would be OK)
