Cherry Cheesecake a la Corries (1974 Cooking Around the World with Ursula)
Ingredients
  • subheading: Crust:
  • 1½ cups graham cracker crumbs
  • ⅓ cup sugar
  • ¼ tsp orange zest
  • ¼ tsp lemon zest
  • 2½ oz butter, melted
  • 1 tsp vanilla butternut flavoring

  • 1½ pkgs (12 oz) softened cream cheese
  • ¾ cup sugar
  • 8 oz sour cream
  •  
  • subheading: Add and mix at medium speed:
  • 1 egg
  • zest of 2 lemons
  • 1 T (½ lemon) fresh lemon juice
  • 1 tsp vanilla flavoring
Steps
  1. Preheat oven to 350°
  2. Combine crust ingredients and press into 2 to 8" pie plates
  3. Combine cream cheese, sugar and cream cheese at high speed until fluffy
  4. Add egg, lemon zest, lemon juice and vanilla. Mix at medium speed until combined; divide into 2 pies
  5. Bake 20 minutes on center rack of oven.
  6. Cool at room temperature until cool.
  7. Freeze for 5 hours.
Notes
  • Ursula's recipe is for 2 8" pans. My old notes say "This recipe fits an 8½ x 11 pan but isn't enough for 9x13 pan. Suggest 1½ times the amounts shown (except the crust) and use 9x13 pan."
  • NEW NOTE: Try 9" springform pan
