Vietnamese-Style Grilled Prawns
Ingredients
  • 2 tbs reduced-salt soy sauce

  • 32 green prawns, peeled, deveined, tails intact
  • ½ bunch mint, leaves picked
  • ½ bunch coriander, leaves picked
  • ½ bunch dill, fronds picked
  • 1 French shallot, thinly sliced lengthways
  • 2 gem lettuce, quartered lengthways
  • lime wedges, to serve
  • 1 ½ tbs rice vinegar
  • 1 ½ tbs lime juice
  • 1 tbs fish sauce
  • 1 tbs caster sugar
  • 1 long red chilli, finely chopped
  • 1 garlic clove, finely chopped
  • 2 kaffir lime leaves, finely sliced
