Island Beef Stew

Ingredients
  • 3 garlic cloves, chopped
  • 8 oz. sliced mushrooms
  • 2 red bell peppers, cubed
  • 1 lb. package of precooked beef chuck pot roast
  • 1 can beef broth
  • 1 tbsp balsamic vinegar
  • 1 tsp jamaican jerk seasoning
Steps
  1. Saute garlic, mushrooms, bellpepper in large pot coated with cooking spray over medium-high heat for 5 minutes or until vegetables are tender.
  2. Add pot roast and next 4 ingredients. Bring to a boil ove rhigh heat, stirring frequently. Cover, reduce heat, and simmer 15 minutes or until sweet potato is tender.
Notes
  • Serve with cornbread
