  • 12 grams light brown sugar

  • 60 grams boiling water

  • 2 liters water
  • 60 grams baked baking soda (see below)

  • 1 large egg, at room temperature
  • flake sea salt, for sprinkling (kosher salt or pretzel salt can be used instead)

  • peanut oil for frying (canola or vegetable oil may be substituted)
