Paleo Clam Chowder with Cauliflower
Ingredients
  • 3 pieces of bacon
  • 2 large sunchokes, chopped (use potatoes if you are not doing Paleo, turnips will work too)
  • 2 small carrots, diced
  • 1 small onion, diced
  • 1 rib of celery, diced
  • 1 large clove of garlic chopped
  • 2 cans of clams not drained (chop clams if whole)
  • 1 cup chicken broth
  • 1 Tablespoon Better than Bouillon (optional)
  • 4 cups cauliflower florets
  • 1 teaspoon minced garlic
  • 2 Tablespoons nutritional yeast
  • 2 Tablespoons olive oil
  • ½ teaspoon sage
  • ½ teaspoon thyme
  • salt & pepper to taste
