Curry Puffs with Curried Chicken
Ingredients

  • 2 coriander roots scraped and chopped
  • 1 tsp salt (5 ml)
  • 3 whole garlic cloves peeled and smashed
  • ½ tsp whole white peppercorns (2.5 ml)
  • 3 tbsp vegetable oil (45 ml)
  • 2 tbsp curry powder (30 ml)
  • 2 tbsp grated palm sugar (30 ml)
  • 2 tbsp light low sodium soy sauce (30 ml)
  • 200 g roughly chopped boneless skinless chicken thighs (6 oz.)
  • 1 medium onion small dice
  • 500 g boiled potatoes cooled, peeled and cubed ¼ inch (1 lb)
  • a little chicken stock or water
  • ½ cup chopped coriander leaves (125 ml)
  • vegetable oil for deep frying about 4 cups (1 L)

  • 1 tbsp ghee or butter (15 ml)
  • 2 cups all- purpose flour (500 ml)
  • 2 tbsp corn starch (30 ml)
  • 1 tsp salt (5 ml)
  • 2 tbsp vegetable oil (30 ml)
  • ¾ cup water (190 ml)
  • subheading: Inner Pastry:
  • 5 tbsp vegetable oil (75 ml)
  • 1 cup plain (all-purpose) flour (250 ml)
  • 1 tbsp cornstarch (15 ml)
