Vegan Cheese Curry Ramen
Ingredients
  • 1 tsp oil of choice
  • 2 green onions, chopped (whites and greens separate)
  • 1 tsp spicy gochujang
  • 1 tsp red curry paste
  • 3 cups of water
  • 1 cup of full fat coconut milk
  • 1 tbsp of mushroom broth powder (you can omit this if you are using broth instead of water)
  • 1 tbsp of tamari
  • 2 to 3 bulbs of Shanghai bok choy, sliced into thin strips(or any other greens of choice)
  • 2 ramen noodle cakes (use gluten free noodles if you want it GF)
  • 2 slices of vegan cheddar-style cheese slices (I used Follow Your Heart/Earth Island)

  • Fried tofu/edamae
  • Toasted sesame seeds
