Oatmeal Pancakes
Since first making this recipe, never again has my family made any other pancake. Delicious, and actually healthy!

Ingredients
  • 2 ¼ c milk
  • 2 c raw oatmeal
  • 4 T oil or melted butter
  • 4 eggs
  • 1 c whole wheat flour
  • 2 T brown sugar
  • 2 t baking powder
  • ½ t salt
Steps
  1. Combine the milk and oatmeal in a bowl and let stand for 5 minutes.
  2. Add the oil and eggs, mixing well.
  3. Stir in the dry ingredients. The mix will be slightly runny, with chunks of oatmeal.
  4. Cook the pancakes on a lightly sprayed skillet over medium heat, using about ⅓ a cup of batter for each pancake. Flip over a few times cooked through.
