Loaded potatoe soup
Ingredients
  • 4 cups chicken broth
  • 3Tbsp butter
  • 6 red potatoes chopped
  • Real bacon bits
  • Can of corn
  • 2 handfuls cheddar cheese
  • 1 cup of milk
  • 1 cup of sour cream
  • 2Tbsp corn starch
  • Salt, pepper, garlic powder to taste
Steps
  1. Add broth and butter to pot. Put in potatoes, corn, bacon bits and seasoning. Cook on high pressure for 10 minutes and do a quick release when finished.
  2. Turn pot to saute and let it come to a boil.
  3. Whisk together 3Tbsp water and cornstarch till smooth. Stir into pot.
  4. Add cheese, milk, and sour cream. Allow to simmer till it thickens and serve.
