Gluten-Free Sweet Potato Protein Bars
Ingredients
  • 1 cup cooked, mashed sweet potato (approx 2 medium)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ¼ cup maple syrup
  • 2 eggs
  • ⅓ cup nut butter
  • ⅓ cup plain yogurt (I used whole milk)
  • ½ tsp baking powder
  • ⅔ cup protein powder (vanilla or chocolate)
  • Optional: chocolate chips to melt and drizzle.
