Ingredients
  • 1 pound of ground beef, or venison, turkey etc
  • 4 to 6 medium potatoes peeled and diced, should be about 4 cups, but you can “eye ball” it, depending on your potato-iness preference.
  • 1 package taco seasoning
  • 1 standard size can of diced tomatoes, do not drain.
  • After browning the meat in a skillet, add to crockpot along with all the above mentioned ingredients and cook on high 3 to 4 hours or low 6 hours, test potatoes for tenderness.
  • subheading: Now add cheese:
  • 1 to 2 cup cheese of your choice divided, I’m going to do 8 oz pepper Jack, and mix it in at the very end, then top it with about ½ cup sharp cheddar (cuz that’s what I have on hand) once I add the cheeses I will cover the crockpot and let it sit until the cheese is melted, I’d say about 15 minutes.
  • This recipe can be altered based on different flavors. Swap out the taco seasoning for 2 brown gravy packets, 2 cups water, add a bag of frozen mixed veggies, I like the peas, carrots or a stir fry mix, add the potatoes like above, maybe some diced onion or whatever you like in your stew. I cook it the same as the taco recipe, and sometimes serve it over potatoes or rice if I’m trying to feed several people.
