Sausage, Zucchini and Spinach Soup
Ingredients
  • 1-¼ lb bulk italian sausage (if using sausage links, remove from casing)
  • 1 large red onion , diced
  • 1 cup chopped celery
  • 4 small cloves garlic , minced
  • 1 tbsp crushed fennel seed
  • ½ tsp garlic powder
  • 2 medium zucchini , diced
  • 2 tbsp tomato paste
  • 1 (14.5 oz) can of crushed tomatoes
  • 2 cups of water (more or less depending on how soupy you want it)
  • 1 ( 5 oz) bag of baby spinach, roughly chopped
  • salt to taste
