Easy make ahead meal. Can be frozen and reheated in oven or BBQ
Ingredients
  • Sausage
  • Onion
  • Peppers - red, green, yellow
  • Garlic - full cloves
  • Salt
  • Pepper
  • Sage - fresh or dried
  • Oregano fresh or dried
  • Olive oil
  • Parsley - at end
Steps
  1. Brown sausage on med/high in olive oil in frying pan. Remove from pan.
  2. Season vegetables with Salt and Pepper and then sauté peppers, onions and garlic until browned and soft about 5 to 10 minutes.
  3. Deglaze the pan and add sausage, vegetables and herbs into a casserole dish or cookie sheet.
  4. Bake in 350 F oven uncovered for 30 to 40 minutes until sausage are done.
Notes
  • Browning sausage in fry pan important - tried it in oven and the sausage dried out before browned.
  • Good for a large crowd
  • Served day after David's wedding
