Ingredients

  • Kosher salt and cracked black pepper, to taste
  • 3 tbsp vegetable oil, divided
  • 2 scallions, cut into 1-inch pieces, plus more for garnish
  • 3 cloves garlic, sliced
  • 2 carrots, diced
  • 1 cup diced red bell peppers
  • ½ cups frozen edamame, thawed
  • 1 tbsp grated ginger
  • 2 tbsp tamari
  • ¼ tsp red pepper flakes, optional
  • ¼ cup chopped cilantro
  • ¼ cup chopped basil
  • lime wedges, for garnish
