Fajita Bowls with Cauliflower Rice Meal Prep
Ingredients
  • 1 tsp minced garlic
  • 1 lb lean ground beef you can substitute with ground turkey or chicken
  • ½ a small yellow onion minced
  • 1 red bell pepper cut into bite-sized squares
  • 1 yellow bell pepper cut into bite-sized squares
  • 1 green bell pepper cut into bite-sized squares
  • 1 orange bell pepper cut into bite-sized squares
  • 1 lime sliced into 4 wedges (for garnish, optional)
  • handful of chopped fresh cilantro for garnish, optional
  • subheading: FAJITA SEASONING:
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • subheading: CAULIFLOWER RICE:
  • 2 tbsp olive oil
  • 4 cups raw cauliflower rice
  • salt as needed
