Modified from Debbie Brosnan's vegetarian Pad Thai
Ingredients
  • 8 ounce rice noodles
  • 8 teaspoon Thai fish sauce
  • 1 teaspoon sriracha
  • 3⁄8 cup vegetable   or canola oil
  • 1 yellow onion   sliced
  • 4 garlic cloves   finely grated
  • 4 eggs   lightly whisked
  • 3 cup beansprouts
  • 1⁄2 cup scallions   cut into 1 ¼" pieces
  • 1⁄2 cup finely chopped peanuts
  • Lime wedges for serving
  • Ground chili   or sliced jalalpeno, or cayenne pepper, (optional)
  • More beansprouts for serving
