Fish Head (or Chicken) Curry
Ingredients
  • ⅓ cup of vegetable oil
  • 2 teaspoon of fenugreek seeds
  • 2 teaspoon of mustard seeds
  • Shitload of curry leaves (about 50)
  • 6 garlic cloves and lots of ginger all blitzed up
  • 2 to 3 tbs curry powder mixed with ½ cup h20
  • 1 red onion sliced
  • 2 tbs tamarind pulp mixed with ½ cup h20
  • 1 can of coconut milk or cream
  • 2 tomatoes chopped (or can of tinned toms)
  • 2 fish heads (or 2kgs chicken drumsticks)
  • 4 carrots
  • 3 potatoes
Steps
  1. 1. Fry fenugreek seeds in oil for a min
  2. 2. Add mustard seeds & fry for another min
  3. 3. Add curry leaves and fry until fragrant
  4. 4. Add blitzed ginger and garlic & fry for a min
  5. 5. Add curry powder mix and fry for a min
  6. 6. Add red onion and fry for a min
  7. 7. Add tamarind pulp mixture and mix well
  8. 8. Add coconut milk and bring to boil
  9. 9. Add fish head (or chicken) and chopped and carrots and potatoes
  10. 10. Season to taste
