APPLE DONUT MUFFINS

Ingredients
  • 3 Cups flour
  • 1 c. sugar
  • ⅛ tsp. salt
  • 1 tsp. ground nutmeg
  • 4 tsp. baking powder
  • 2 eggs, beaten lightly
  • 1 cup grated apple (gala or granny smith)
  • ⅔ cup shortening
  • ½ cup buttermilk
Steps
  1. Combine dry ingredients.
  2. Cut in shortening with a pastry blender.
  3. Mix together beaten egg, buttermilk and grated apple all together. Add to dry ingredients and stir just until moistened.
  4. Fill muffin cups ⅔ full.
  5. Bake at 350 for 20 to 25 minutes.
  6. After removing from oven, dip muffin tops in melted butter, and then in a cinnamon and sugar mixture.
  7. If you are using baking cups, you can drizzle melted butter on tops with a spoon and then sprinkle cinnamon & sugar mixture on top.
Notes
  • These freeze well.
