Lentil + Chickpea Salad Sandwiches {A.K.A. Vegan “Egg” Salad Sandwiches}
Ingredients
  • 1 cup cooked red lentils
  • 1 cup chickpeas, canned (drained)
  • 1 celery rib, finely chopped
  • 1 carrot, grated
  • ¼ red or green bell pepper, finely chopped (optional)
  • 2 to 3 green onions, finely chopped
  • 1 medium pickle, finely chopped
  • 3 tbsp fresh dill, finely chopped
  • ½ tbsp lemon juice
  • 3 to 4 tbsp vegan mayo (I use 4) (or sub for hummus)
  • 2 to 3 tbsp nutritional yeast (I use 3)
  • ¼ tsp black salt
  • black pepper, to taste
