Slow Cooker Moroccan Chickpea Stew with Couscous
Ingredients
  • 8 oz dried chickpeas, soaked in cold water overnight
  • ½ cup extra virgin olive oil
  • 2 onions, diced
  • 3 cloves garlic, minced
  • ½ bunch fresh parsley, de-stemmed, washed and chopped
  • ½ bunch fresh cilantro, de-stemmed, washed and chopped
  • 2 carrots, diced
  • 2 medium potatoes, diced
  • ½ tsp cumin
  • ½ tsp turmeric
  • ½ tsp paprika
  • ¼ tsp coriander
  • ¼ tsp cinnamon
  • ¼ tsp curry powder
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 28 oz can crushed tomatoes
  • 3 cups water
  • 1 Tbsp honey
  • 2 cups Israeli couscous
