Lemon Rice {Healthy Rice Recipe}
Ingredients
  • 1 cup brown rice
  • 1 ¾ cups coconut water plus a few additional tablespoons as needed (or swap unsalted vegetable or chicken broth)
  • 1 tablespoon coconut oil
  • ¼ teaspoon kosher salt plus additional to taste
  • Zest and juice of 1 medium lemon about ¼ cup juice
  • 2 tablespoons Italian parsley minced (or any herbs you love*)
