Spoja Lorda (Cheese Stuffed Pasta Squares)
Ingredients

  • 400 grams (14 oz) "00" flour, or unbleached all-purpose flour (every 100 grams = 1 scant cup)
  • 4 large eggs
  • subheading: For the filling:
  • 200 grams (7 oz) ricotta cheese, preferably fresh
  • 100 grams (3.5 oz) soft tangy cheese, such as goat, cream cheese, Fromage Blanc, or Boursin
  • 100 grams (3.5 oz) Parmigiano-Reggiano cheese, freshly grated, plus more for serving
  • 1 egg
  • Freshly grated nutmeg, to taste
  • fine sea salt, to taste
  • 1 ½ to 2 liters (1 ½ to 2 quarts) meat or chicken broth, preferably homemade (see note)
