Ingredients
  • Oil for frying
  • 1 large brown or white onion, peeled and chopped, sauté in oil
  • 5 cloves garlic, peeled and chopped
  • 2 tablespoons curry powder*
  • 2 cups chicken broth
  • Chicken thighs
  • 1 can Loma Linda Fry-Chick, cut into chunks
  • 400g/14ozs. potatoes, cut into bite sized pieces
  • 2 carrots, cut into bite sized pieces
  • Salt to season
  • 6 tablespoons/90g/3ozs. plain all purpose flour
  • 2 cups coconut cream or milk
  • 1 cup frozen sweet peas
  • Steamed rice or coconut rice to serve
