SweetEs Classic Crepes (F)

Ingredients
  • 2 oz room temperature cream cheese
  • ¼ cup softened ricotta cheese
  • 4 large eggs
  • Generous pinch of mineral salt
  • ½ tsp aluminum free baking powder
  • ¼ tsp cinnamon
  • 2 Tbsp SweetEs fusion sweet
Steps
  1. Place all items in high speed blender. Blend until smooth.
  2. Let batter sit for 5 minutes
  3. Heat non stick (round) pan on stove over medium high heat- lower to medium low once heated.
  4. Lightly grease with buttery coconut oil and pour a scant ¼ cup batter into hot pan. Swirl batter in circular motion by rotating pan until batter is even around.
  5. Cook 2 minutes until firm and lightly browned- flip carefully and cook other side for 2 minutes. Do not flip until the crepe is “set”....even if it goes 3 minutes on side 1- just cook for less time on the other side.
  6. Repeat process until all are cooked.
