Beyond Beef Shepherds Pie

300g Beyond Beef®

2 medium Yukon Gold potatoes (750g)

2 Tbsp plant-based butter

1 tsp salt, divided

1 Tbsp olive oil

½ yellow onion

2 carrots

2 cloves garlic

1 Tbsp flour

1 tsp dried parsley

1 tsp dried rosemary

1 tsp dried thyme

1 tsp paprika

2 Tbsp tomato paste

2 tsp plant-based Worcestershire sauce

1 cup vegetable broth

½ cup frozen peas

¼ cup frozen corn
