Spicy Roasted Cauliflower Salad
Ingredients
  • subheading: Quinoa & Herbs:
  • ¾ cup dry quinoa (sub with same amount of white rice)
  • 1 handful of mint leaves, finely minced
  • 1 handful of cilantro leaves, finely minced
  • subheading: Cauliflower & Chickpeas:
  • ½ head cauliflower, chopped into florets
  • 1 can (14 oz) chickpeas, drained and rinsed
  • ½ medium red onion, cut into thick strips
  • Kosher salt
  • Olive oil
  • subheading: Tadka/Dressing:
  • 3 tbsp olive oil
  • 2 tsp cumin seeds
  • ½ tsp garlic powder (sub with 1 finely minced garlic clove)
  • ½ tsp kosher salt, plus more as needed
  • ½ tsp cayenne pepper
  • ½ tsp cinnamon
  • ¼ tsp turmeric
  • ¼ tsp black pepper
  • 3 tbsp lemon juice
  • 1 tsp honey or maple syrup
